This looks like a really good and super easy recipe, and I’m thinking it would be good for a July 4th potluck. I can never find “heavy cream” in my grocery stores, but rather “whipping cream.” Are they essentially the same thing? Also, does the top layer of chocolate remain soft, even after refrigerating? If so, is there a way to make it so it is less likely to get all over the hands; some way to harden or solidify that top layer? Thank you! I have just subscribed.
Hi! You can also use whipping cream in this recipe. It has a little less fat, about 30%. That's not the case, but if a recipe calls for beating and making whipped cream, for example, heavy cream (which has about 35-36% fat) is better because it holds its shape for longer. For the ganache, I used chocolate with 40% cocoa solids. If you use chocolate with 50 or 65%, the ganache will be firmer. If you only have chocolate with a low cocoa solid percentage (like milk chocolate, which has about 25%), just double the amount of chocolate.

Do you have to use cream cheese . Can you replace it with tofu. I'm lactose intolerant.
Hi Carmen! I've never tried using tofu in a cheesecake before, so I can't guarantee it'll work in this recipe. I think it might work if the tofu firms up in the fridge, but I'm not sure how it'll taste.
It should work you might need to add a little agar agar and something else that would give it a more cheese cake taste maybe a pinch of lemon and more sugar but it could work I have seen tofu cheese cake recipes before and vegan ones so you can use vegan butter and vegan cream cheese or tofu and agar agar.

You can, but be careful not to overheat it. It's not necessary to bring the mixture to a boil. Just heat it until slightly warm. 😊
